Paleo Candy Corn Panna Cotta

26 Oct

img_9823

Ditch the store-bought, sugar-laden plastic bags of candy corn this Halloween, and make your self this seasonal treat instead! This candy corn panna cotta is not only delicious, it also makes a great presentation! Dairy-free, gluten-free, grain-free and refined sugar-free, so you don’t have to feel bad about tucking into a festive favorite. These make fantastic party desserts, and are suitable for most food-sensitive diets.

The star of this dish is probably the Sprouts brand coconut milk. I’m a huge fan of coconut milk in most of my recipes, and it helps to give this candy corn panna cotta its fluffy, light texture.

This panna cotta dish is a festive and healthy Halloween dessert! It is easy to make, but it does take time for the layers to set, so make it ahead of time for a seasonal treat.

Paleo Candy Corn Panna Cotta

Yellow Layer

1 cup Sprouts Brand coconut milk
5 tsp. gelatin (find pasture-raised gelatin here)
½ tsp. vanilla (find organic and gluten-free here)
2 Tbsp. raw honey (find it here)
10-15 drops natural yellow food coloring (find it here)

Orange Layer

1 cup 100% orange juice (without pulp)
5 tsp. gelatin
1 Tbsp. raw honey
3-4 drops natural yellow food coloring (find it here)

White Layer

1 cup Sprouts Brand coconut milk
5 tsp. gelatin
½ tsp. vanilla
2 Tbsp. raw honey

  1. Bloom the gelatin by pouring ½ cup of coconut milk into a bowl. Sprinkle the gelatin over it and set aside.
  2. Place the remaining coconut milk, vanilla and honey in a saucepan over medium heat for 10 minutes. Do not boil.
  3. Add the bloomed gelatin to the saucepan. Add the natural food coloring until you get the desired shade of yellow.
  4. Vigorously whisk until the bloomed gelatin is well combined with the coconut milk mixture.
  5. Allow the mixture to cool, then pour evenly into 2 stemless wine glasses.
  6. Allow the first layer to set for 2-3 hours.
  7. Next, make the orange layer. Bloom the gelatin, by pouring 1/2 cup of orange juice into a bowl. Sprinkle the gelatin over it and set aside.
  8. Place the remaining orange juice, honey and gelatin in a saucepan over medium heat for 10 minutes. Do not boil. Add a few more drops of natural yellow food coloring to get the right shade of orange.
  9. Add the bloomed gelatin to the saucepan. Vigorously whisk until the bloomed gelatin is well combined with the orange juice mixture.
  10. Allow the mixture to cool, then pour evenly over the yellow layer.
  11. Allow the orange layer to set for 2-3 hours.
  12. Bloom the gelatin, by pouring 1/2 cup of coconut milk into a bowl. Sprinkle the gelatin over it and set aside.
  13. Place the remaining coconut milk, vanilla and honey in a saucepan over medium heat for 10 minutes. Do not boil.
  14. Add the bloomed gelatin to the saucepan. Vigorously whisk until the bloomed gelatin is well combined with the coconut milk mixture.
