I was in the mood for a comforting slow cooker meal that really highlighted some great cuts of grass-fed beef. Sprouts brand beef is the good stuff: the cattle graze in open pastures and are never given antibiotics or hormones. If you’ve tried conventional grocery store beef, you can really taste the difference (not to mention that grass-fed beef is higher in omega-3 fatty acids than grain-fed).
This recipe utilizes beef stew meat, but inspiration struck while at Sprouts and I ended up using several different cuts (as show in the recipe images). Stew meat will give you a filling, delicious meal, but feel free to experiment with different cuts, or whatever grass-fed beef you have on hand. The spices and vegetables lend themselves well to any protein.
This slow cooker beef curry is easy to make and will fill your home with the scents of fragrant spices. Toss it in in the morning and come home to a delicious and comforting meal of tender grass-fed beef, spicy and flavorful green beans in a tomato-based sauce. Serve it with white rice or cauliflower rice, for a lower carb option.
Spicy Grass-fed Beef Curry with Green Beans
2 lbs. Sprouts brand grass-fed beef stew meat
1 tsp. sea salt
½ tsp. black pepper
½ tsp. Sprouts brand organic turmeric
½ tsp. Sprouts brand organic cumin
2 tsp. organic Garam Masala (find it here)
2 tsp. Sprouts brand organic curry powder
1 tsp. Sprouts brand organic crushed chili peppers
1 Tbsp. olive oil or ghee
1 yellow onion, sliced
3 cloves garlic, minced
½ cup of beef broth (find pasture-raised beef broth HERE or make your own)
18 oz. chopped tomatoes (in a jar or can)
1 jalapeno, minced
1 lb. organic green beans
½ cup cilantro, chopped
- Pat beef dry with a paper towel and set aside.
- In a large bowl, combine salt, black pepper, turmeric, cumin, Garam Masala, curry powder, and crushed chili peppers. Add beef to the spice mixture and using your hands, turn until the beef is well coated with spices. Set aside.
- Heat a heavy bottomed skillet over medium-heat, add olive oil or ghee. Once it is nice and warm, add the onions. Cook, stirring occasionally, until onions are translucent, about 5 minutes. Add garlic and cook for 1 more minute.
- Transfer onion mixture to the slow cooker.
- Add more oil if needed, then add the seasoned beef to the skillet. Cook beef for 5 minutes, until browned. Move beef to the slow cooker.
- Add broth to the skillet and use a wooden spoon to scrape off any brown bits from the skillet. Then add broth to the slow cooker.
- Add chopped tomatoes and jalapeno to the slow cooker.
- Secure the lid and cook on low for 6 hours.
- Add the green beans and cook for an additional 30 minutes.
- Stir in cilantro, adjust salt and pepper and serve.
