I am so excited to share this delicious recipe for a 5 Ingredient Paleo Guacamole with you. It is from my friend Cindy Sexton’s brand new cookbook, Paleo Takes 5 – Or Fewer. This is a must-have book for those of us that have packed schedules, but want to eat, healthy and easy Paleo meals!
I had the pleasure of spending time with Cindy and her husband at a recent Paleo conference, AHS. We had so much fun with them! Their book is easy going, fun and vibrant, just like them!
5 Ingredient Paleo Guacamole
creamy garlicky guacamole
Makes 4 cups
From the grocer: avocados + grape tomatoes + fresh garlic + lime juice + fresh cilantro
4 to 6 large avocados (ripe and soft, but not too soft to the touch)
1⁄2 pint grape tomatoes, finely chopped
5 cloves fresh garlic, minced
1⁄4 cup to 1⁄3 cup (60 to 77 mL) freshly squeezed lime juice
handful fresh cilantro, chopped (we use lots!)
sea salt and ground pepper to taste
hot sauce or chopped jalapeño peppers for garnish (optional)
- In a large glass bowl, squash the avocado with a large fork or a potato masher. Do this until most of the large chunks have been smoothed out. Then, add in the tomato, garlic, lime juice, fresh cilantro, salt and pepper and continue stirring together until you have reached your desired consistency.
- If you want it to be really creamy, and don’t want to do this by hand, feel free to toss everything in a large food processor and blend together that way.
+ Side note: If you like a little spice in your life and want to kick it up a notch, throw in a few splashes of hot sauce at the end or some chopped jalapeños.
+ Nutrient Density Fact: Fresh garlic (raw) is an excellent source of vitamin B6 and a very good source of manganese. It is also a good source of copper, selenium and vitamin C.
