I really love a good cole-slaw or pretty much anything with cabbage including sauerkraut, kimchi & cabbage torshi (persian-picked vegetables). We have been receiving heads of cabbage in our CSA box the last few weeks, so I thought it was a prefect time to give cole-slaw a try.
1/4 head of green cabbage – finely shredded
1 large carrot – grated
2 green-onions – thinly sliced
1/3 cup chopped fresh herbs – parsley, basil, & mint
1/2 teaspoon caraway seeds
1 pinch dried mustard
1 tablespoon white balsamic vinegar
2-3 tablespoons olive oil
juice of half a lemon
salt and pepper to taste
- In a large bowl, toss together all of the salad ingredients.
- To make the vinaigrette, whisk together all ingredients. Taste and add lemon juice, salt, and pepper as needed
- Toss salad with dressing, cover and let chill
